Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add 2 cups of elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Making the Cheese Sauce

    Prepare the Roux

    In a medium saucepan over medium heat, melt 4 tablespoons of butter. Once melted, sprinkle in 1 tablespoon of all-purpose flour and whisk continuously for about 1-2 minutes until the mixture is bubbly and golden.

    Add Milk

    Slowly pour in 2 cups of milk while continuously whisking to prevent lumps. Continue to cook for about 5 minutes until the sauce thickens.

    Incorporate Cheeses

    Reduce the heat to low and add 2 cups of shredded cheddar cheese and 2 cups of shredded Monterey Jack cheese. Stir until the cheese is completely melted and the sauce is smooth.

    Season the Sauce

    Add 1 teaspoon of salt, 0.5 teaspoon of black pepper, 0.5 teaspoon of garlic powder, and 0.5 teaspoon of onion powder to the cheese sauce. Stir well to combine.

Combining and Baking

    In a large mixing bowl, combine the cooked pasta and the cheese sauce. Stir until the pasta is evenly coated.

    In a small bowl, mix together 1 cup of breadcrumbs, 0.5 cup of grated Parmesan cheese, and 2 tablespoons of olive oil. Stir until the breadcrumbs are evenly coated.
