Lemon Butter Sauce
Preparing the Chicken Scaloppine
1. Pound the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet.
2. Season the Chicken
Season both sides of the chicken breasts with salt and black pepper.
3. Cook the Chicken
In a large skillet over medium heat, heat 2 tablespoons of butter. Add the chicken and cook for about 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
4. Sauté the Vegetables
In the same skillet, add the remaining 2 tablespoons of butter. Add garlic and sauté for 1 minute until fragrant. Then add mushrooms and artichoke hearts, cooking until tender (about 3-4 minutes).
5. Add Capers and Prosciutto
Stir in capers and prosciutto, cooking for an additional 2 minutes. Return the chicken to the skillet and cook for another 2-3 minutes.
Making the Lemon Butter Sauce and Pasta
6. Prepare the Lemon Butter Sauce
Add lemon juice to the skillet with the chicken and vegetables, stirring to combine and coating the chicken well with the sauce.
7. Cook the Capellini
In a separate pot, bring water to a boil and cook the capellini pasta according to package instructions until al dente. Drain and set aside.
