Chicken Parmesan Sandwich

Prepare the Chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.

Bread the Chicken
Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and breadcrumbs mixed with grated Parmesan cheese in the third. Dredge each chicken breast in flour, dip into the eggs, then coat with the breadcrumb mixture.

Cook the Chicken
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown.

Add Sauce and Cheese
Spoon marinara sauce over each chicken breast, then top with mozzarella slices. Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the chicken is cooked through and cheese is bubbly.

Assemble the Sandwich
Slice the ciabatta rolls in half. Place a piece of chicken on the bottom half of each roll, top with fresh basil leaves, and cover with the top half of the roll.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Season the Fries
In a large bowl, toss the potato strips with olive oil, salt, and chopped parsley until evenly coated.

Bake the Fries
Spread the fries on a baking sheet lined with parchment paper in a single layer. Bake in the oven for about 25-30 minutes, flipping halfway through, until crispy and golden brown.

Once the fries are done baking, drizzle with truffle oil and toss to combine. Serve hot alongside the chicken parmesan sandwiches.
