Chicken Preparation

    Prepare Chicken Breasts

    Pound the chicken breasts to an even thickness of about 1/2 inch for uniform cooking.

    Bread the Chicken

    Set up a breading station with three shallow bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese. Dredge each chicken breast in flour, dip in egg, then coat with breadcrumbs.

    Fry the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Sauce Preparation

    Prepare the Sauce

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the Pomodorina sauce and simmer for about 10-15 minutes. Add fresh basil leaves at the end and stir to combine.

Assembly and Cooking

    Assemble Chicken Parmesan

    Preheat the oven to 375°F (190°C). In a baking dish, layer the fried chicken breasts, pour the Pomodorina sauce over the top, and sprinkle shredded mozzarella cheese on each piece.

    Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.

Pasta Preparation

    Cook Capellini

    In a large pot of salted boiling water, add capellini pasta and cook according to package instructions until al dente. Drain the pasta and toss with a little olive oil to prevent sticking.
