Making the Chianti Demi-Glaze Sauce

Deglaze the Pan
Pour in the Chianti wine and scrape the bottom of the pan to release any browned bits. Bring to a simmer and let reduce by half.

Making Buttermilk Mashed Potatoes

Mash Potatoes
Drain the potatoes and return to the pot. Add buttermilk, butter, salt, and black pepper. Mash until smooth and creamy.
Sautéing the Greens

Sauté the Greens
In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the spinach or broccolini and cook until wilted, about 3-5 minutes. Season with salt and black pepper to taste.
