Preparation

Cook the Rigatoni
In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside.

Grill the Chicken
Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest before slicing.

Caramelize the Onions
In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add sliced onions and cook for about 10-15 minutes, stirring frequently, until they are soft and golden brown.

Combine Ingredients
Pour the Marsala wine into the skillet with the onions and mushrooms. Bring to a simmer and let it reduce for about 3-5 minutes.

Add Cream
Lower the heat and stir in the heavy cream, mixing well. Let it cook for another 3-4 minutes.

Incorporate Cheese
Add the grated Parmesan cheese to the sauce, stirring until melted and smooth. Adjust seasoning with salt and pepper to taste.

Combine Everything
Add the cooked rigatoni to the sauce, tossing gently to coat the pasta thoroughly. Slice the grilled chicken and place it on top of the pasta.

Serve hot, garnished with extra Parmesan cheese if desired.
