    In a large, heavy pot or Dutch oven, heat olive oil over medium-high heat. Add the lamb shanks and sear them for about 4-5 minutes on each side until browned. Remove shanks from the pot and set aside.

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.

    Stir in the tomato paste and cook for 2 minutes, allowing it to caramelize slightly.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let it reduce by half.
