Steak Preparation

Season the Steak
Sprinkle the aged ribeye steaks generously with salt and black pepper on both sides. Allow them to sit at room temperature for about 30 minutes before cooking.

Sear the Steak
In a large skillet or cast-iron pan, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Carefully place the steaks in the pan and sear for 4-5 minutes without moving them to develop a nice crust.

Add Aromatics
After 4-5 minutes, flip the steaks and add the crushed garlic cloves and rosemary to the pan. Continue to cook for an additional 4-5 minutes, basting the steaks with the oil and juices by tilting the pan slightly.

Check for Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, remove the steaks when they reach 130-135°F (54-57°C).

Rest the Steak
Transfer the steaks to a cutting board and let them rest for at least 10 minutes before slicing.

Sauté the Vegetables
In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced vegetables and sauté for about 5-7 minutes until they are tender but still crisp.

Season the sautéed vegetables with salt and black pepper to taste, and stir well to combine.
