Preparing Tortilla Chips

Cutting Tortillas
Cut each corn tortilla into six equal triangles to create the chips.

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the tortilla triangles in small batches, frying them until they are golden brown and crispy, about 2-3 minutes. Remove them using a slotted spoon and place on paper towels to drain excess oil.

In a medium bowl, combine diced tomatoes, finely chopped onion, chopped cilantro, and lime juice. Season with salt and black pepper to taste. Mix well and set aside to let flavors meld.

Preheat your oven to 350°F (175°C). On a large baking sheet, spread a layer of tortilla chips. Top evenly with shredded cheddar cheese and jalapeños.

Place the baking sheet in the oven and bake for approximately 10 minutes, or until the cheese is melted and bubbly.
