Preparing the Meat

Roast the Tri-Tip
Place the seasoned tri-tip on a roasting pan and insert it into the preheated oven. Roast for about 25-30 minutes, or until it reaches an internal temperature of 135°F (medium-rare) to 145°F (medium).

Rest the Meat
Once cooked, remove the tri-tip from the oven and let it rest for 10-15 minutes. This helps to retain the juices.

Chop the Vegetables
While the meat is resting, thinly slice the onion and bell peppers.

Assembling the Roll

Slice the Tri-Tip
After the tri-tip has rested, slice it thinly against the grain.

Build the Roll
Take a french roll and spread a generous amount of creamy horseradish sauce on the inside. Layer with sliced tri-tip, sautéed onions, and bell peppers. Top with provolone cheese.

Melt the Cheese
If desired, place the assembled roll under the broiler for 1-2 minutes until the cheese is melted and bubbly.

Serve the roasted tri-tip roll immediately while hot, with extra horseradish sauce on the side for dipping.
