Roast Preparation

Season the Beef
Preheat your oven to 300°F (150°C). Rub the beef roast with olive oil, then season it generously with salt, black pepper, garlic powder, and onion powder on all sides.

Roast the Beef
Place the seasoned beef roast in a roasting pan. Roast in the preheated oven for about 3-4 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Once done, remove from the oven and let it rest for 15-20 minutes before slicing.

Sauté Onions and Mushrooms
In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Then add the sliced mushrooms and continue to sauté until they are tender and browned, about 5-7 minutes more. Season with salt and pepper to taste.

After the beef has rested, slice it thinly against the grain.

Serve the roast beef sandwiches warm. Optionally, you can melt the cheese by placing the assembled sandwiches under a broiler for 1-2 minutes before serving.
