Preparation of Chicken

Marinate the Chicken
In a bowl, combine olive oil, minced garlic, chopped fresh rosemary, lemon juice, salt, and black pepper. Mix well. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let them marinate in the refrigerator for at least 30 minutes.

Preheat the Oven
Preheat your oven to 200°C (400°F). This temperature will help achieve a beautifully roasted chicken.

Prepare the Vegetables
Wash and halve the baby potatoes. Peel and cut the carrots into sticks. In a large pot, bring water to a boil, add a pinch of salt, and blanch the broccoli florets for 2 minutes. Remove and place them in ice water to maintain their color.

Roast the Vegetables
In a large baking dish, add the halved baby potatoes and carrot sticks. Drizzle with olive oil, sprinkle with salt, and toss to coat. Place the marinated chicken thighs on top of the vegetables and pour any remaining marinade over them.

Bake the Dish
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the chicken is cooked through and has a golden color.

Remove from the oven and let it rest for 5 minutes. In a pan, melt butter and toss the blanched broccoli with chopped fresh parsley. Serve the chicken and vegetables on a plate, garnished with additional parsley if desired.
