Fries

Method

Preparing the Fries

  1. 1

    Cutting the Potatoes

Wash and scrub the Russet potatoes thoroughly. Cut each potato into even-sized fries, about 1/4 inch thick.

  2. 2

    Soaking the Fries

Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch, resulting in crispier fries.

  3. 3

    Drying the Fries

After soaking, drain the fries and pat them dry with paper towels. Make sure they are as dry as possible to prevent oil splatter during frying.

Frying the Fries

  1. 4

    Heating the Oil

In a large deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  2. 5

    Frying the Fries

Carefully add a batch of fries to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels. Season with salt.

  3. 6

    Repeat

Continue frying the remaining batches of fries, ensuring the oil temperature remains consistent.

Preparing the Herb Garlic Mixture

  1. 7

    Mixing the Ingredients

In a large bowl, combine the minced garlic, chili flakes, dried oregano, dried thyme, dried basil, grated Parmesan cheese, and lemon zest.

  2. 8

    Coating the Fries

Once the fries are fried and drained, add them to the bowl with the herb garlic mixture. Toss the fries gently to ensure they are evenly coated.

Serving

  1. 9

    Final Touch

Transfer the herbed garlic fries to a serving platter. Optionally, sprinkle with additional Parmesan cheese and lemon zest for garnish. Serve immediately.
