    Prepare the Ginger Base

    Peel and grate the fresh ginger root. In a saucepan, combine the grated ginger and 4 cups of water. Bring to a boil over medium heat, then reduce the heat and simmer for about 10 minutes.

    Strain the Ginger Mixture

    After simmering, remove the saucepan from heat. Strain the ginger mixture through a fine mesh sieve into a bowl to remove the ginger pulp, pressing down to extract as much liquid as possible.

    Mix in Sugar and Lime Juice

    While the ginger liquid is still warm, stir in 1 cup of granulated sugar until dissolved. Then add 1 cup of fresh lime juice, mixing well to combine.

    Chill the Ginger Beer Base

    Allow the ginger beer base to cool to room temperature, then cover and refrigerate for at least 2 hours or until completely chilled.

    Prepare Mint Garnish

    While the ginger beer base is chilling, rinse and pat dry the mint leaves. Set aside for garnishing.

    Combine with Club Soda

    In a large pitcher, combine the chilled ginger beer base with 4 cups of club soda. Stir gently to combine without losing too much carbonation.

    Serve

    Fill glasses with ice, pour the ginger beer over the ice, and garnish with mint leaves and a lime wedge.
