    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and let them rest at room temperature for about 30 minutes. This ensures even cooking.

    Season the Steaks

    Generously season both sides of the filet mignon with kosher salt and freshly ground black pepper. Drizzle with olive oil and rub it into the meat. Add a sprig of fresh thyme on top of each steak.

Grilling

    Preheat the Grill

    Preheat your grill to high heat (about 450-500°F or 232-260°C). Make sure the grill grates are clean and oiled to prevent sticking.

    Grill the Steaks

    Place the seasoned filet mignon steaks on the grill. Cook for about 4-5 minutes on one side without moving them to get a good sear.

    Flip the Steaks

    Using tongs, carefully flip the steaks over. Cook for another 4-5 minutes for medium-rare, or adjust the time according to your preferred level of doneness.

Optional Finishing Touch

    Butter Baste

    In the last minute of cooking, add butter and smashed garlic cloves to the grill. Use a spoon to baste the melted butter over the steaks for added flavor.

    Rest the Steaks

    Remove the steaks from the grill and let them rest for about 5-10 minutes before serving. This allows the juices to redistribute.
