Prepare the Fajita Filling

Cook the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breast with fajita seasoning, then add it to the skillet. Cook for 5-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing into strips.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add sliced onion and bell peppers. Sauté for 5-6 minutes until they are tender and slightly charred. Season with a pinch of salt and pepper.

Prepare the Rice
While the chicken and vegetables are cooking, prepare the rice according to package instructions. Set aside once cooked.

Warm the Tortillas
Wrap the flour tortillas in aluminum foil and place them in the oven at 350°F (175°C) for about 10 minutes, or until warm.
Assemble the Fajitas

Combine and Serve
On each tortilla, layer slices of chicken, sautéed onions, and bell peppers. Top with shredded cheddar cheese. Serve with a side of rice.
