Method

Preparing the Elk Burgers

    Mix the Elk Patty Ingredients

    In a large bowl, combine the ground elk meat, salt, black pepper, garlic powder, and onion powder. Mix gently until just combined. Do not overwork the meat.

    Shape the Patties

    Divide the mixture into 4 equal portions and shape each into a patty about ¾ inch thick. Make a slight indentation in the center of each patty to prevent it from puffing up while cooking.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Once hot, cook the patties for about 4-5 minutes on each side, or until they reach an internal temperature of 160°F (71°C). In the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

Making the Roasted Garlic Aioli

    Prepare the Aioli

    In a small bowl, mash the roasted garlic cloves with a fork until smooth. Add the mayonnaise, lemon juice, and salt, and mix well until combined. Adjust seasoning to taste.

Assembling the Burgers

    Prepare the Buns

    Toast the brioche buns on the grill or in the oven until golden brown.

    Assemble the Burgers

    Spread a generous amount of roasted garlic aioli on the bottom half of each toasted brioche bun. Top with the elk patty, followed by arugula, tomato slices, pickled onions, shredded carrots, and jalapeños. Place the top half of the bun on each burger.
