Method

For the Crispy Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. This step is crucial for achieving a crispy texture.

  2. 2

    Make the Breading Mixture

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until evenly distributed.

  3. 3

    Soak the Calamari

In another bowl, pour the buttermilk and add the calamari rings. Let them soak for at least 30 minutes to tenderize and add flavor.

  4. 4

    Heat the Oil

In a large, deep skillet or a pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small piece of bread in the oil; if it sizzles, it's ready.

  5. 5

    Coat the Calamari

Remove the calamari from the buttermilk and let the excess drip off. Dredge the calamari in the flour mixture, ensuring each piece is well coated.

  6. 6

    Fry the Calamari

Carefully place the coated calamari in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

  7. 7

    Drain and Serve

Using a slotted spoon, remove the calamari and place them on a plate lined with paper towels to drain excess oil. Serve immediately.

For the Spicy Aioli

  1. 8

    Prepare the Spicy Aioli

In a small bowl, combine the mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Mix well until smooth and creamy.

  2. 9

    Serve

Serve the spicy aioli alongside the crispy calamari for dipping.
