Cooking the Pasta

    Boil the Orzo

    In a large pot, bring 4 cups of water to a boil. Add 1 cup of orzo pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Making the Cream Sauce

    Sauté Onions and Garlic

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add 1 medium red onion (finely chopped) and sauté until translucent, about 5 minutes. Add 2 minced garlic cloves and cook for an additional 1-2 minutes until fragrant.

    Prepare the Cream

    Pour in 1 cup of heavy cream and bring to a gentle simmer. Stir in 1 cup of grated Parmesan cheese, 1 teaspoon of salt, and 1 teaspoon of black pepper. Continue stirring until the cheese is melted and the sauce is smooth.

    Add Spinach and Sun-dried Tomatoes

    Incorporate 4 cups of fresh spinach and 1 cup of chopped sun-dried tomatoes into the sauce. Cook for about 2-3 minutes, until the spinach wilts.

    Finish with Lemon Juice

    Stir in 2 tablespoons of lemon juice for brightness and flavor. Mix well to combine all ingredients.

Combining the Ingredients

    Combine Orzo with Sauce

    Add the cooked orzo to the skillet with the cream sauce. Toss gently to coat the orzo evenly with the sauce. If the mixture is too thick, you can add a splash of pasta water to loosen it.

    Serve the creamy spinach orzo warm, garnished with additional Parmesan cheese and black pepper if desired.
