Preparation of Shrimp

Boil the Shrimp
In a large pot, bring water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and rinse under cold water to stop cooking. Set aside.

Combine the Ingredients
In a large mixing bowl, combine the diced cucumber, chopped red onion, diced tomatoes, and chopped cilantro.

Add Shrimp and Seasonings
Add the cooked shrimp to the mixing bowl. Pour in the lime juice, and sprinkle with salt and black pepper. Stir gently to combine all the ingredients.
Chilling and Serving

Chill the Ceviche
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve the ceviche in small bowls or on a platter alongside tortilla chips for dipping.
