    Prepare the Ingredients

    If using fresh clams, clean and cook them in boiling water until they open. Remove from shells and chop. Dice the potatoes, chop the onion, and celery.

Cooking

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion and celery. Sauté until the onion is translucent, about 5 minutes.

    Add Flour

    Sprinkle the flour over the sautéed vegetables and stir well. Cook for another 2 minutes, stirring constantly to avoid burning.

    Pour in Broth

    Gradually add the chicken or vegetable broth while stirring to avoid lumps. Bring to a simmer.

    Add Potatoes and Seasonings

    Add the diced potatoes, salt, black pepper, thyme, and bay leaf. Stir to combine. Cover and simmer for about 15 minutes, or until the potatoes are tender.

    Incorporate Clams and Milk

    Once the potatoes are tender, stir in the clams and milk or cream. Cook for an additional 5 minutes, just until heated through. Taste and adjust seasoning if necessary.

    Remove the bay leaf. Ladle the chowder into bowls or cups. Garnish with chopped parsley, bacon bits, and serve with crackers on the side.
