Cake Preparation

Preheat the Oven
Preheat your oven to 425°F (220°C).

Melt Chocolate and Butter
In a medium saucepan, over low heat, melt the unsweetened chocolate and unsalted butter together, stirring until smooth. Remove from heat and let it cool slightly.

Mix Sugar and Eggs
In a large mixing bowl, combine the granulated sugar, large eggs, and large egg yolks. Whisk together until the mixture is thick and pale.

Combine Mixtures
Slowly add the melted chocolate mixture into the egg mixture, whisking continuously until well combined.

Add Vanilla and Flour
Stir in the vanilla extract, all-purpose flour, and a pinch of salt until just combined. Be careful not to overmix.

Fill Ramekins
Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.

Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

Cool Slightly
Remove from the oven and let the cakes cool for 1-2 minutes before inverting onto plates.
Serving

Serve with Ice Cream
Place a scoop of vanilla ice cream beside each lava cake. Optionally, sprinkle chocolate shavings on top for garnish.
