Crust Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.

Form Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake Crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow to cool while preparing the filling.
Filling Preparation

Mix Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar
Gradually add the sugar while continuing to beat until well combined.

Incorporate Sour Cream and Vanilla
Add the sour cream and vanilla extract to the cream cheese mixture and mix until smooth.

Add Eggs and Lemon Juice
Add the eggs one at a time, mixing on low speed after each addition until just combined. Then mix in the lemon juice.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust, spreading it evenly.

Bake Cheesecake
Bake in the oven for 55-60 minutes, or until the edges are set but the center still has a slight jiggle.

Cool and Chill
Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
