Method

For the Chicken Bites

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts, making sure they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour, or up to overnight for best results.

  2. 2

    Prepare for Frying

Once marinated, remove the chicken from the buttermilk and let any excess drip off. Dredge the chicken in flour, ensuring all sides are coated evenly. Set aside on a plate.

  3. 3

    Heat the Oil

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Fry the Chicken Bites

Carefully add the coated chicken pieces to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

For the Buffalo Sauce

  1. 5

    Make the Buffalo Sauce

In a small saucepan, melt the butter over medium heat. Once melted, add the hot sauce, garlic powder, and Worcestershire sauce. Stir to combine and heat through for about 2-3 minutes. Remove from heat.

For the Ranch Dressing

  1. 6

    Prepare the Ranch Dressing

In a mixing bowl, combine the mayonnaise, sour cream, buttermilk, dill, garlic powder, onion powder, salt, and black pepper. Whisk until smooth and all ingredients are well incorporated. Adjust seasoning to taste.
