    Season the Steak

    In a small bowl, combine salt, black pepper, garlic powder, and smoked paprika. Rub the mixture all over the bison ribeye steak, ensuring it is evenly coated.

    Let the seasoned steak rest at room temperature for about 30 minutes to allow the flavors to penetrate the meat.

Cooking

    Preheat the Pan

    Heat a cast iron skillet or heavy frying pan over medium-high heat. Add olive oil and allow it to get hot, shimmering but not smoking.

    Cook the Steak

    Once the pan is hot, carefully place the bison ribeye steak in the skillet. Cook for 4-5 minutes on one side without moving it to form a good crust.

    Flip the Steak

    Using tongs, flip the steak over and cook for another 3-4 minutes for medium-rare, or longer if desired. Use a meat thermometer to check for an internal temperature of 130°F for medium-rare.

Resting and Serving

    Once cooked to your liking, remove the steak from the skillet and let it rest for 5-10 minutes on a cutting board. This allows the juices to redistribute.
