Steak Preparation

    Season the Steak

    Season the AAA Alberta Beef Sirloin with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Add Demi-glace

    Once cooked, remove the steak from the skillet and let it rest. Pour demi-glace into the skillet and simmer for a few minutes until heated through.

Fries Preparation

    Prep the Potatoes

    Wash and peel the russet potatoes. Cut them into skinny fries.

    Fry the Potatoes

    Heat olive oil in a deep fryer or a deep pot to 350°F (175°C). Add the fries in batches and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.

Chipotle Aioli Preparation

    Mix the Aioli

    In a bowl, combine mayonnaise, chipotle peppers, lime juice, and minced garlic. Mix well until smooth and creamy. Adjust seasoning to taste.

Serving

    Plate the Dish

    Slice the steak and place it on a plate. Drizzle with demi-glace and serve alongside the hand-cut skinny fries and chipotle aioli.
