Prepare the Pork Belly
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the pork belly with salt and black pepper. Sear the pork belly on all sides until golden brown, about 5-7 minutes. Remove from the skillet and set aside.

Braised Pork Belly
In the same skillet, add minced garlic and ginger, sauté for 1 minute until fragrant. Place the pork belly back into the skillet, add soy sauce and honey. Cover and simmer on low heat for about 1.5 hours, until the pork belly is tender.

Sear the Scallops
Once the pork belly is cooked, remove it from the skillet and keep warm. In a separate pan, heat 1 tablespoon of olive oil over medium-high heat. Season the scallops with salt and black pepper. Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through.

Prepare the Garnish
While the scallops are cooking, thinly slice the scallions and radish.

Plate the Dish
On a plate, slice the braised pork belly and arrange it next to the seared scallops. Drizzle with the honey soy glaze from the skillet and top with fresh scallions and sliced radish.
