Shucking the Oysters
Carefully shuck the West Coast oysters using an oyster knife. Hold the oyster in a towel and insert the knife into the hinge, twisting to open. Remove the top shell and set aside the oysters in their bottom shells.

In a small bowl, combine the red wine vinegar, finely chopped shallots, and freshly cracked black pepper. Stir well and let the sauce sit for at least 10 minutes to allow the flavors to meld.
