Directions

  1. 1

    Prepare the oysters

Rinse the fresh oysters under cold water and gently scrub the shells to remove any dirt. Shuck the oysters and place them on a plate, discarding the top shells.

  2. 2

    Prepare the batter

In a shallow bowl, mix the all-purpose flour, cornmeal, salt, black pepper, and paprika. In another bowl, whisk together the eggs and milk until well combined.

  3. 3

    Coat the oysters

Dip each oyster first into the egg mixture, then dredge in the flour and cornmeal mixture until fully coated.

  4. 4

    Fry the oysters

In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully place the coated oysters into the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

  5. 5

    Drain and serve

Remove the fried oysters from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately with lemon wedges on the side.
