Preparation

   Cleaning Oysters

   Rinse oysters under cold running water to remove any dirt and debris. Use a brush if necessary.

   Opening Oysters

   Hold the oyster in a towel with the hinge facing you. Insert an oyster knife into the hinge and twist to pry it open. Slide the knife along the shell to cut the muscle and remove the top shell.

   Serving

   Serve oysters on a platter with ice. Optionally, provide lemon wedges, cocktail sauce, or mignonette sauce on the side.
