Mussels Preparation

Clean the Mussels
Rinse the fresh mussels under cold running water, scrubbing the shells with a brush to remove any debris. Remove beards if present.

Cook the Mussels
In a large pot, melt the butter over medium heat. Add the minced garlic and shallots, sautéing until translucent. Add the white wine and bring to a simmer.

Add Mussels
Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.

Finish the Dish
Stir in the chopped dill and lemon juice. Serve hot with the fries and lemon aioli.
Fries Preparation

Prepare the Potatoes
Preheat the oven to 425°F (220°C). Toss the potato strips with olive oil and salt in a large bowl until evenly coated.

Bake the Fries
Spread the potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Lemon Aioli Preparation

Mix the Aioli
In a small bowl, combine mayonnaise, minced garlic, and lemon juice. Season with salt and pepper to taste. Mix well and refrigerate until ready to serve.
