    In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes, until the vegetables are softened.

    Add the canned diced tomatoes, clam juice, and diced potatoes. Stir well to combine.

    Add the bay leaves, dried thyme, salt, and black pepper. Bring the mixture to a simmer.

    Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the potatoes are tender.
