    Shuck the Oysters

    Carefully shuck the Maine Flat oysters using an oyster knife. Discard the top shell, and place the oysters on a serving platter with their liquid.

    Prepare the Mignonette

    In a small bowl, combine chopped shallots, red wine vinegar, and fresh parsley. Mix well and set aside.

    Serve

    Serve the oysters on ice with lemon wedges, hot sauce, and the shallot mignonette on the side. Sprinkle sea salt over the oysters if desired.
