Prepare the Tartar Sauce

Mix Ingredients
In a bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and salt. Mix well and refrigerate until serving.
Prepare the Fries

Cut and Fry Potatoes
Peel and cut the russet potatoes into thin strips. Rinse under cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.
Prepare the Fish

Make the Batter
In a bowl, mix the flour, cornstarch, baking powder, salt, and black pepper. Slowly whisk in the cold sparkling water until the batter is smooth.

Fry the Fish
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry until golden brown and cooked through, about 4-6 minutes. Remove and drain on paper towels.

Serve the fried haddock with a side of skinny fries and a generous portion of tartar sauce for dipping.
