Cook the Rice
In a medium saucepan, combine jasmine rice, coconut milk, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed. Fluff with a fork before serving.
Green Curry Shrimp

Prepare the Vegetables and Shrimp
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the eggplant, bell peppers, and jalapeno. Sauté for about 5-7 minutes until they soften.

Add the Shrimp
Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.

Make the Sauce
Stir in the mild green curry paste, followed by the coconut milk and vegetable broth. Simmer for another 5 minutes until the sauce thickens slightly.

Add Carrots
Finally, stir in the shaved carrots and cook for an additional 2 minutes. Adjust seasoning with salt and pepper to taste.

Plate the Dish
Serve the green curry shrimp over a bed of coconut jasmine rice. Garnish with fresh chopped cilantro.
