Preparation

    Shuck the Oysters

    Carefully shuck the West Coast oysters, discarding the top shell and placing the oysters on a serving platter with the bottom shell.

    Prepare Garlic Butter

    In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

    Prepare Topping Mixture

    In a mixing bowl, combine breadcrumbs, sautéed garlic butter (reserving a little for drizzling), and chopped parsley. Mix well.

Cooking

    Top the Oysters

    Spoon a generous amount of the breadcrumb mixture onto each oyster.

    Broil the Oysters

    Preheat the broiler. Place the oysters under the broiler for 3-5 minutes, or until the topping is golden brown and crispy.

    Serve

    Remove from broiler, drizzle with reserved garlic butter, and serve with lemon wedges and hot sauce on the side.
