Wine Making Process

Harvesting
Select and hand-harvest Pinot Noir grapes from the vineyard in Beamsville, Ontario.

Crushing and Destemming
Crush and destem the grapes in a clean, sanitized environment to extract the juice and pulp.

Fermentation
Inoculate the must with yeast and allow fermentation to occur in stainless steel tanks at controlled temperatures for approximately 2 weeks.

Pressing
Once fermentation is complete, press the wine to separate the liquid from the solids.

Aging
Transfer the wine to oak barrels (or add oak chips) for aging for 6-12 months, depending on desired flavor profile.

Fining and Filtration
After aging, fine and filter the wine to clarify and stabilize it.

Bottling
Bottle the wine in clean, sanitized bottles and add sulfites to preserve freshness.

Labeling
Label the bottles appropriately with the vintage and designation 'Dolomite' Pinot Noir 2020.
