Calamari Preparation

Prepare the Dredging Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

Dredge the Calamari
Toss the cleaned calamari rings in the dredging mixture until well coated. Shake off any excess flour.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Mix the Sauce
In a bowl, combine mayonnaise, buttermilk, garlic powder, onion powder, dill pickle juice, salt, and black pepper. Stir until smooth. Adjust seasoning to taste.
