Calamari

White Boy Ranch Sauce

Method

Calamari Preparation

  1. 1

    Prepare the Dredging Mixture

In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

  2. 2

    Dredge the Calamari

Toss the cleaned calamari rings in the dredging mixture until well coated. Shake off any excess flour.

  3. 3

    Heat the Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  4. 4

    Fry the Calamari

Carefully add the coated calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

  5. 5

    Sauté Shallots and Parsley

In a large pan, sauté the sliced shallots in a bit of the oil used for frying until soft. Add the fried calamari and chopped parsley, tossing everything together.

White Boy Ranch Sauce Preparation

  1. 6

    Mix the Sauce

In a bowl, combine mayonnaise, buttermilk, garlic powder, onion powder, dill pickle juice, salt, and black pepper. Stir until smooth. Adjust seasoning to taste.
