Method

Preparation

  1. 1

    Prepare the Vegetables

Preheat the oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes. Add broccolini and roast for an additional 10 minutes.

  2. 2

    Caramelize the Onions

In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 15 minutes.

  3. 3

    Prepare the Dressing

In a blender, combine Greek yogurt, avocado, lemon juice, minced garlic, olive oil, salt, and pepper. Blend until smooth and creamy.

Cooking the Fish

  1. 4

    Butter Roast the Black Cod

In a large oven-safe skillet, melt the remaining butter over medium heat. Season the black cod fillets with salt and pepper. Place the fillets in the skillet and cook for 3-4 minutes until browned. Carefully flip and transfer the skillet to the oven. Roast for an additional 5-7 minutes until the fish is flaky.

Serving

  1. 5

    Plate the Dish

Serve the roasted black cod on a plate with caramelized onions, roasted potatoes, and broccolini. Drizzle with green goddess dressing and garnish with fresh radish slices and herbs.
