Spicy Tomato Sauce

Preparing the Potatoes

Peel and Cut the Potatoes
Peel the Russet potatoes and cut them into 1-inch cubes.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Drain and Dry
Drain the potatoes and pat them dry with a clean kitchen towel.

Fry the Potatoes
In a large frying pan, heat the olive oil over medium-high heat. Once hot, add the potatoes in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt.
Making the Spicy Tomato Sauce

Add Tomatoes and Spices
Stir in the canned diced tomatoes, red chili flakes, smoked paprika, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for about 10-15 minutes, stirring occasionally, until thickened. Adjust seasoning to taste.
Serving

Serve the fried potatoes hot, topped with the spicy tomato sauce. Enjoy!
