Prepare the Marinade
In a small bowl, combine lemon juice, minced garlic, olive oil, salt, and black pepper. Mix well.

Marinate the Salmon
Place the salmon fillets in a shallow dish. Pour the marinade over the salmon, ensuring each fillet is evenly coated. Let it marinate for at least 30 minutes in the refrigerator.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Bake the Salmon
Place the marinated salmon fillets on a lined baking sheet. Bake for 12-15 minutes, or until the salmon flakes easily with a fork.

Once cooked, remove from the oven and sprinkle with fresh parsley before serving.

Toast the Rice
Add the long-grain rice to the saucepan and stir to coat the rice with oil and onion. Cook for an additional 2-3 minutes until the rice is lightly toasted.

Pour in the chicken or vegetable broth, and add salt and black pepper. Bring to a boil.

Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is tender and all the liquid is absorbed.

Remove from heat, fluff the rice with a fork, and serve warm.

Wash and chop the mixed seasonal vegetables into bite-sized pieces.
