    Prepare the Oven-Roasted Tomatoes

    Preheat your oven to 400°F (200°C). Cut the tomatoes in half, drizzle with olive oil, and sprinkle with salt and black pepper. Place them cut side up on a baking sheet and roast for about 25-30 minutes, or until slightly caramelized and soft. Let cool and chop into smaller pieces.

    Cook the Lasagna Noodles

    Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside, ensuring they do not stick together.

    Make the Ricotta Cheese Mixture

    In a mixing bowl, combine ricotta cheese, egg, minced garlic, chopped basil, salt, black pepper, and crushed red pepper flakes. Mix thoroughly until all ingredients are well incorporated.

    Assemble the Lasagna

    In a 9x13 inch baking dish, spread a thin layer of the oven-roasted tomatoes on the bottom. Place a layer of lasagna noodles over the tomatoes. Spread half of the ricotta cheese mixture over the noodles, followed by a layer of mozzarella cheese and some more roasted tomatoes. Repeat the layers ending with a final layer of noodles topped with the remaining roasted tomatoes and a generous sprinkle of mozzarella and Parmesan cheese.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.

    Once baked, remove from the oven and let it rest for 10-15 minutes before slicing. Serve hot and enjoy your homemade lasagna!
