Cheesecake Base

Method

Cheesecake Base

  1. 1

    Prepare the Cream Cheese Mixture

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

  2. 2

    Add Sugar and Sour Cream

Gradually add the granulated sugar and continue to mix until well combined. Then, add the sour cream and mix until smooth.

  3. 3

    Incorporate Flavorings

Add vanilla extract, lemon juice, and mix on low speed until just combined.

  4. 4

    Add Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

  5. 5

    Add Flour

Sift in the all-purpose flour and gently fold it into the mixture using a spatula until just combined.

  6. 6

    Prepare for Baking

Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and pour the cheesecake batter into the pan.

  7. 7

    Bake the Cheesecake

Bake in the preheated oven for 60-70 minutes, or until the center is set and the edges slightly golden. Turn off the oven and let the cheesecake sit in the oven with the door ajar for 1 hour.

  8. 8

    Chill the Cheesecake

Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.
