Prepare the Vegetables
Wash and dice the tomatoes into small cubes. Peel and slice the onion thinly.

Sauté the Onions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they become translucent, about 5 minutes.

Add Tomatoes
Add the diced tomatoes to the skillet with the onions. Stir well and cook for another 5 minutes until the tomatoes soften and release their juices.

Season the Mixture
Sprinkle the salt, black pepper, and dried oregano over the tomato and onion mixture. Stir to combine and cook for an additional 2-3 minutes.

Add the Cheeses
Lower the heat and add the grated Fontinella cheese to the skillet, stirring until melted and well combined. Then, sprinkle the Pecorino cheese on top and allow it to melt slightly.
Serving

Plate the Dish
Remove from heat and transfer the mixture to a serving dish. You can serve it warm as a dip or with crusty bread for a delightful appetizer.
