Preparation of Mussels

    Clean the Mussels

    Rinse the PEI mussels under cold running water, scrubbing the shells with a brush to remove any dirt or debris. Remove the beards (the fibrous strands) if necessary.

    Sauté Aromatics

    In a large pot over medium heat, melt 4 tablespoons of unsalted butter. Add the minced garlic and diced shallots, sautéing until fragrant and translucent, about 3-4 minutes.

    Add Wine and Mussels

    Pour in 1 cup of dry white wine and bring the mixture to a simmer. Add the cleaned mussels to the pot, cover with a lid, and cook for about 5-7 minutes, shaking the pot occasionally, until the mussels open. Discard any mussels that do not open.

    Finish the Sauce

    Once the mussels are cooked, stir in 2 tablespoons of lemon juice, 1 tablespoon of chopped fresh parsley, salt, and black pepper. Remove from heat.

Preparation of Grilled Bread

    Prepare the Baguette

    Slice the baguette into 1-inch thick slices. Brush both sides of each slice with 2 tablespoons of olive oil.

    Grill the Bread

    Preheat a grill or grill pan over medium-high heat. Grill the bread slices for 2-3 minutes on each side until they are toasted and have grill marks.

Serving

    Plate the Mussels

    Serve the mussels in a large bowl, drizzling the sauce over the top. Accompany with the grilled bread slices for dipping.
