Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add activated yeast mixture and olive oil.

Knead the Dough
Mix the ingredients until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Add Tomatoes
Add the San Marzano tomatoes (crushed by hand) and salt to the saucepan. Simmer for about 15-20 minutes until slightly thickened.

Finish the Sauce
Stir in chopped fresh basil and cook for an additional minute. Remove from heat and let cool.
Pizza Assembly

Preheat Oven
Preheat your oven to the highest setting (usually around 500°F or 260°C) and place a pizza stone or baking sheet inside.

Shape the Dough
Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness.

Add Sauce and Cheese
Spread a generous amount of sauce on each dough round, leaving a small border for the crust. Evenly distribute slices of Galbani mozzarella cheese on top.

Bake the Pizza
Carefully transfer the pizza to the preheated stone or baking sheet. Bake for about 10-12 minutes, or until the crust is golden and the cheese is bubbly.

Once baked, remove the pizza from the oven and immediately sprinkle fresh basil leaves on top. Drizzle with olive oil before slicing.
