Method

Preparing the Coffee Mixture

  1. 1

    Brew the Espresso

Brew 1 cup of strong espresso coffee and set aside to cool.

  2. 2

    Sweeten the Coffee

Stir in 1/4 cup of granulated sugar into the warm espresso until dissolved. Allow to cool completely.

Making the Filling

  1. 3

    Prepare the Egg Mixture

In a large bowl, whisk together 4 large egg yolks and 3/4 cup of granulated sugar until the mixture becomes pale and creamy.

  2. 4

    Add Mascarpone

Gently fold in 16 oz of mascarpone cheese until smooth and well combined.

  3. 5

    Whip the Cream

In a separate bowl, whip 1 cup of heavy cream with 1 tsp of vanilla extract until stiff peaks form.

  4. 6

    Combine Mixtures

Gently fold the whipped cream into the mascarpone mixture until fully incorporated.

Assembling the Tiramisu

  1. 7

    Soak the Ladyfingers

Quickly dip each ladyfinger into the cooled espresso mixture, ensuring they are soaked but not soggy.

  2. 8

    Layer the Tiramisu

In a 9x13 inch dish, create a layer of soaked ladyfingers, followed by a layer of the mascarpone filling. Repeat until all ingredients are used, finishing with a layer of filling.

Chilling and Serving

  1. 9

    Chill

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

  2. 10

    Serve and Garnish

Before serving, dust the top with 2 tbs of cocoa powder and sprinkle with dark chocolate shavings.
