Prepare the Marinade

Mix Marinade Ingredients
In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper until well combined.
Marinate the Wings

Combine Wings and Marinade
In a large resealable plastic bag or a shallow dish, add the chicken wings and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.
Roast the Wings

Preheat the Wood Oven
Preheat your wood-burning oven to a temperature of around 450°F (232°C).

Prepare the Wings for Cooking
Remove the wings from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.

Roast the Wings
Place the wings directly on the oven rack or on a baking tray. Roast in the wood-burning oven for 25-30 minutes, turning halfway through, until the wings are crispy and cooked through, reaching an internal temperature of 165°F (74°C).

Serve
Remove the wings from the oven, let them rest for a few minutes, then serve hot with your favorite dipping sauce.
