Preparing the Beef

Cook to Medium Rare
Continue cooking the beef until it reaches an internal temperature of 130°F (54°C) for medium rare. This usually takes about 15-20 minutes total, depending on thickness.

Rest the Beef
Remove the beef from the heat and let it rest on a cutting board for at least 10 minutes before slicing. This allows the juices to redistribute.

Slice the Beef
Using a sharp knife, slice the beef tenderloin thinly against the grain.
Assemble the Rolls

Prepare the Rolls
While the beef is resting, slice the soft rolls in half.

Add Condiments
Spread a layer of Dijon mustard and mayonnaise on each half of the rolls.

Layer the Sliced Beef
Place a generous amount of the sliced beef tenderloin on the bottom half of each roll.

Top with Vegetables
Add sliced red onions, sliced tomatoes, and a handful of mixed greens on top of the beef.

Place the top half of the roll over the filled bottom half to complete the sandwich.
