    Prepare Ingredients

    Wash and chop all vegetables. Dice the bell peppers, slice the zucchini, and slice the red onion. Mince the garlic.

    Heat Oil

    In a large skillet, heat 1 cup of olive oil over medium heat.

    Sauté Vegetables

    Add the diced bell peppers, sliced zucchini, and sliced red onion to the skillet. Sauté for about 5 minutes until they start to soften.

    Add Garlic

    Stir in the minced garlic, salt, and black pepper. Cook for an additional 2-3 minutes until garlic is fragrant.

    Finish with Basil

    Remove from heat and stir in the chopped fresh basil. Serve warm.

Roasted Potatoes

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Potatoes

    In a large bowl, combine halved baby potatoes, 0.5 cups of olive oil, garlic powder, paprika, salt, and black pepper. Toss until the potatoes are well coated.

    Roast Potatoes

    Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy.

    Garnish

    Remove from the oven and sprinkle with chopped fresh parsley before serving.
